Enjoy Prep Time: 20 minutes | Cook Time: 45 minutes | Yields: 12 servings Ingredients 16 Whole Wheat Lasagna Noodles 14 ounce firm tofu 20 ounce marinara Sauce 14 ounce artichoke hearts 4 cup fresh spinach 3 cup Dairy Free Mozzarella Cheese Directions Lay first layer of lasagna noodles in a casserole dish. Drain tofu. Once drained, put in food processor with marinara sauce, artichoke hearts, and 1 cup of spinach. Process until thoroughly mixed. Add tofu mixture on top of the layer of lasagna noodles. Then add 1 cup of spinach, then 1 cup of dairy-free cheese. Repeat this process until the last layer, then spread remaining tofu mixture, spinach, and cheese. Top with one last layer of lasagna noodles. Heat oven to 350 degrees. Once heated, put lasagna in the oven for 35-40 minutes. Let cool 5 minutes before serving. Serve with vegan Parmesan, fresh spinach salad, and garlic bread, and a vegan red wine. Enjoy

With Easter and Mothers Day quickly approaching, I want to share with you which vegan chocolates I think are the most mouth watering delicious!

Is there anything better than a rich, velvety smooth bite of chocolate? Of course not! I’ve tried them all and these are my favorite vegan chocolates, hands down. Whether you’re gifting them or eating them all yourself, you can’t go wrong with the offerings on this list. We love it from childhood, but do we even know where chocolate comes from? It’s actually pretty fascinating stuff: Chocolate is the bean (seed) of the cacao fruit. Shaped like a small football, cacao pods grow on trees throughout Central and South America, as well as across Africa and Asia. Inside the fruit, there’s a white fleshy pulp (you can eat this! it’s sweet!) and hidden inside the pulp are the chocolate beans. One cacao fruit can contain as many as 60 beans! The chocolate bean is big for a bean — about the size of an almond or even a Brazil nut. When it comes out of the pod raw, it can be dark purple. It doesn’t taste much like chocolate at that point — it is strong and bitter. But once fermented, dried, and roasted, it starts to take on that warm and nutty flavor we all know and love. Dairy is added to the vast majority of chocolate. And it’s totally not necessary! First of all, it makes chocolate inedible for a large percentage of the population as more than 65 percent of Black and Asian people are lactose intolerant. Even if you’re not lactose intolerant, dairy can cause health issues including congestion, inflammation, and acne, among other serious conditions. But dairy is also an exploitative industry that keeps female cows pregnant and forced to give their milk away. Their babies are taken away from them (so humans can have the milk) — and for male calves, this often means a death sentence as a veal calf. Then, after years of milk production, cows aren’t sent to retirement, they’re slaughtered for cheap beef. Best vegan chocolates So there’s every reason to opt for vegan chocolate, right? You’re in luck. These days, there are more vegan chocolate and confectionery options than ever before. Even Hershey’s and Cadbury now offer vegan chocolate. But if you want the best of the best, try these — my favorite. Amore di Mona has insane caramel. They also make versions of caramel with fruit inside like cherries, which are also so fantastic. Their dark chocolate is really good but I preferred their caramel. Their chocolate is Fair Trade, organic, and uses raw agave nectar. Hu is the best! My favorites are Cashew Butter + Raspberry Dark Chocolate, Hazelnut Butter Dark Chocolate, Chocolate-Covered Hunks Cashews + Vanilla Beans, and Chocolate-Covered Hunks Sour Goldenberries. Hu’s chocolates are sweetened with coconut sugar so after eating it you get a less buzzy sugar high! Nohmad Snack Co.‘s Creamy Coconut Milk Cacao and Coffee Crunch Cacao bars are tasty and worth mentioning because of their simple clean ingredients: organic raw cacao, organic raw cacao butter, and organic maple sugar! Lagusta’s Luscious turtle bar is fun! If you’re a Snickers fan, it’s basically three snickers in one. Super heavy and yum! They also make this maple honeycomb bar that I love! If you’re familiar with the British candy bar “Crunchie Bar”, it’s very similar except vegan of course, with maple syrup and no honey! Added bonus, they’re both made of Fair Trade, organic, and non-GMO ingredients. Tony’s Chocolonely Dark Almond Sea Salt is great. The packaging looks so cool.

Creamy Roasted Cauliflower Leek & Chickpea Pasta

Whip up these easy, vegan pasta dish with pepper cream sauce, chickpeas, and roasted vegetables. I just can’t get down with that no-carb life! So if you, too, are all about comforting warmer meals then this post is for you. There’s no dairy required to get a creamy, yummy texture in this pasta dish. Ingredients 1 head of cauliflower 3 leeks 5 garlic cloves 3 tablespoons extra virgin olive oil 1-1/2 teaspoons kosher salt 1/2 teaspoon cracked black pepper 2 cups cooked chickpeas 1 lb. of pasta such as fusilli 1/4 cup chopped parsley Roasted Pepper Cream Sauce 1-1/2 cups unsweetened non-dairy milk (soy, almond, etc.) 1/2 cup full fat coconut milk 1/2 cup cooked white rice 1 roasted sweet red pepper, skin and seeds removed 2 tablespoons nutritional yeast 2 tablespoons extra virgin olive oil 1 tablespoon fresh lemon juice 1 teaspoon kosher salt 1/2 teaspoon cracked black pepper 1/2 to 1 cup reserved pasta cooking water Method 1. Preheat oven to 425˚F. 2. Remove hard woody stems from cauliflower and chop into small florets. Remove outer stalks of leeks and slice into thin rings. Wash sliced leeks thoroughly in a bowl of water and let them float to the top. Scoop leeks out, leaving water and any sediment behind and drain well. 3. Toss cauliflower, leeks and garlic cloves with skins on in olive oil, salt and pepper. Bake on a sheet pan for 25-30 minutes until browned and fork tender. Remove garlic cloves to be used in the sauce. 4. While veggies are roasting, prepare the sauce. In a blender add milks, cooked rice, roasted red pepper, nutritional yeast, olive oil, lemon juice, salt and pepper and blend until smooth and creamy. When garlic is done roasting, remove skins then add it to sauce and puree until smooth. 5. Cook pasta al dente in boiling salted water according the package directions. 6. While pasta cooks, pour sauce into a large deep-sided skillet and heat on lowest setting, stirring occasionally. Reserve 1 cup of pasta cooking water then drain pasta and add it to the pan. Fold in roasted cauliflower and leeks and chickpeas. Add reserved pasta water to loosen the sauce if necessary. 7. Remove from heat and fold in chopped parsley. Optionally garnish with lemon zest and/or toasted pine nuts. Serve immediately. Keep leftovers covered in fridge for up to 3 days. Reheat with a little milk to loosen sauce and serve or serve cold as a pasta salad. An unmissable appointment for those who loved the legendary Fiorucci store in Milan, the Elio Fiorucci exhibition has just opened and will remain at the Triennale Milano until 16 March 2025. To all intents and purposes, it is a chronological but also an emotional journey, curated by Judith Clark with exhibition design by Fabio Cherstich. The exhibition is the largest and richest in works and documents ever dedicated to Elio Fiorucci and proposes the various stages of the creative genius of such a multifaceted figure: a brilliant entrepreneur, the very first cool hunter and the founder of the brand that revolutionised costume, fashion and the contemporary art scene in Italy from the 1960s onwards. The exhibition is proposed as a retrospective with a clear biographical intent, encompassing the human, entrepreneurial and cultural vicissitudes of Elio Fiorucci, taking a new look at his figure. It also presents the research developed by academics and collaborators, recounting Fiorucci’s unique vision and a series of experiments that revolutionised Italian and global fashion and marketing. The exhibition focuses in particular on the designer’s life and biography. Following a chronological order, materials from his personal archive as well as industrial products are presented, recounting Fiorucci’s unmistakable aesthetic. The exhibition design emphasises the theatricality of the different parts that make up the story: the entire exhibition is traversed by Elio Fiorucci’s voice – rendered through hitherto unpublished recordings – which retraces some personal moments and is set in dialogue with the voices of other protagonists of the stylist’s history, creating a narrative that is interwoven with the brand’s story. The initial plan was for the two former MLB relief pitchers to participate in one of Barstool’s Rough N’ Rowdy fights, scheduled for April 18. However, according to Portney, Brittany — wife of Kansas City Chiefs quarterback Patrick Mahomes II — quashed the idea. “Mahomes’ agent, the football player, and Brittany — from what I am told — intervened and were like, ‘There’s no way this fight’s happening,'” Portnoy, 47, said during a Friday, February 21, appearance on “The Unnamed Show” podcast. “’We’re going to cut this guy off if he does it.’” Mahomes Sr., 54, and Rocker, 50, made news in the hours after the Super Bowl in New Orleans, where the Philadelphia Eagles defeated the Chiefs. The two were recorded having a heated argument on Bourbon Street, trading insults as a couple onlookers tried to separate them. Male Celebrities Are Starting to Stir the Pot More Than Ever The elder Mahomes, who pitched 11 seasons in the Major Leagues, is currently on probation and told a court that the squabble was staged to boost publicity for the fight, according to TMZ. I would have Rocked him.” While their fight in New Orleans was staged, the hate between the two is apparently real. “They came to us to do this,” Portnoy said of the showdown. “How would we ever come up with this concept. Like, Oh, let’s put John Rocker vs. Pat Mahomes Sr. Like, who would ever think of that?” He added, “They came to us and said they hated each other and wanted to fight.” The rivalry between Mahomes Sr. and Rocker goes back decades. Mahomes Sr. pitched for the New York Mets in 1999 and 2000 while Rocker was with the Atlanta Braves. The Mets and Braves were heated rivals at the time, with Rocker going on an infamous racist and homophobic rant in a 2000 interview with Sports Illustrated about the people of New York. I mean very sick,” Collins, 74, told MOJO magazine in an interview published on Tuesday, February 18. The legendary singer-songwriter, whose daughter is Emily in Paris star Lily Collins, has largely retreated from the public eye following the completion of his band Genesis’s The Last Domino? Tour in March 2022. A myriad of health problems meant Phil sat in a chair during those shows, while his son, Nic Collins, replaced him on drums. In this new interview, Phil admitted that his health setbacks have dampened his interest in writing and recording new music. Lily Collins and Dad Phil Collins’ Ups and Downs Through the Years “I keep thinking I should go downstairs to the studio and see what happens. But I’m not hungry for it anymore,” he conceded. Collins is a type 2 diabetic and also suffered nerve damage from a spinal injury in 2007. He was unable to play drums at all for a period of time, before undergoing surgery in 2015. Rodgers, 41, and the Jets lost 40-14 to the Buffalo Bills on Sunday, December 29, the team’s 6th loss in 7 games which dropped their overall season record to a wildly disappointing 4-12. During the CBS broadcast of Sunday’s game, legendary play-by-play analyst Jim Nantz revealed how Rodgers responded when he asked him about his future in New York. “He looked us right in the eye and said, ‘I really don’t know. I’ll take some time,'” Nantz, 65, said. The 10 Wildest and Most Surprising Moments From 'Aaron Rodgers: Enigma' Rodgers is still under contract with the Jets through the end of next season. The team could decide to move on from the legendary quarterback, which would come at a great financial burden to the franchise. There’s also a chance Rodgers could simply decide to walk away himself. After Sunday’s game, Rodgers told reporters the loss was a microcosm of the Jets entire year. “I mean, it’s kind of like the season, it just got away from us,” he said. “Too many games got away from us. Page Six reported on Friday, February 21, that Jennifer Young — a 38-year-old from Los Angeles — welcomed a child with Grohl in August 2024 amid his marriage to wife Jordyn Blum. Us Weekly confirmed on Friday, February 21, that Lively and her husband, Ryan Reynolds, submitted a letter to a judge one day prior in order to ask for a protective order that is stronger than the standard one they were granted when the saga began. Per the letter, Lively is seeking “additional protections” after she and “her family, other members of the cast, various fact witnesses, and individuals that have spoken out publicly in support of Ms. Lively have received violent, profane, sexist, and threatening communications.” The actress filed a lawsuit against Baldoni in December 2024 accusing him of sexual harassment and creating a “hostile work environment” on the set of their film, which was released that summer. Per medical examiner records viewed by Us Weekly, Baena died by suicide. “This is an unimaginable tragedy,” Plaza’s rep said in a statement to Us on January 6 on behalf of the actress and her family. “We are deeply grateful to everyone who has offered support. Please respect our privacy during this time.” Days after Baena’s death, manager Simon Jones shared that RuPaul’s Drag Race star James Lee Williams — better known as The Vivienne — died at age 32. “James was an incredibly loved, warm-hearted and amazing person,” the publicist shared in an Instagram statement on January 5. “Their family are heartbroken at the loss of their son, brother and uncle. They are so proud of the wonderful things James achieved in their life and career. We will not be releasing any further details. Özmen, best known as Lavinia Özmen on TikTok, died following a traffic collision in Manisa, according to a Monday, February 17, report by CNNTurk. The social media star and another individual, who has not been publicly identified, allegedly died when their car crashed into a tanker parked in the emergency lane. CNN further reported that law enforcement and first responders had been dispatched to the scene, where Özmen and the vehicle’s driver were both pronounced dead. Further details have not been revealed and an investigation is ongoing. Most Shocking TikTok Star Deaths: Chris O'Donnell and More Özmen was active on TikTok, amassing 200,000 followers. She last posted on Monday ahead of the CNN report, and the comments have since been flooded with “RIP” messages. She also had more than 26,000 followers on Instagram, where she often opened up about hardships faced during childhood. Özmen last posted on Instagram on February 9 to share a similar story about a woman named Ela. In the comments section, many of Özmen’s followers expressed their condolences. “Rest in peace ,” one translated message reads, while another says, “We have a new story. Arroyave, 47, explained his outlook via an Instagram Reel posted on Thursday, February 20, just over a week after Mellencamp’s surgery. “So I wanted to share with you guys something that has always helped me through tough times and that’s just remembering that happiness is not the absence of problems, it’s the ability to deal with them,” he said. “And as simple as this is going to sound, my No. 1 secret to dealing with problems is just having faith.” Arroyave presented it as a choice between positive and negative thinking.
